Our team specializes in all aspects of the industry from foodservice and menu trends to the newest equipment and creating the perfect tabletop for your establishment.

Caitlin Shelton

General Manager

Caitlin has spent the past 15 years of her career in the restaurant and hospitality industry in Providence, Los Angeles and Boston. In 2015, she transitioned from restaurant management to become a TriMark Sales Representative in Boston. When plans for the Innovation Center began in 2017, the combination of Caitlin's strong understanding of customer needs, extensive knowledge of TriMark’s products and her keen eye for design and cutting-edge style made her a perfect fit to serve as General Manager. In her spare time, she enjoys cooking, exploring new restaurants and spending time with her dog Mona, the Center’s mascot.

Edward Payne

Regional Sales Manager and Executive Chef

Eddie’s love and passion for hospitality developed at age 13 when he began making homemade pizza. At 18 years old, he started his career at the Ritz Carlton in Boston where the standard of “Ladies and Gentlemen Serving Ladies and Gentlemen” was instilled in him. In his mid-twenties, Eddie got his first Executive Chef position at Davio’s Northern Italian Steak House, where he experienced true Italian cuisine. When his daughters Samantha and Amanda were born, a new passion flourished—family! He transitioned into the manufacturing and sales side of the industry; spending 10 years at Joseph’s Gourmet Pasta as Chef/Director of foodservice sales. When the company sold to Nestle, Eddie became a Managing Partner of Tuscan Brands, an artisan Italian Kitchen. After 5 years there, he joined the team at TriMark as the Boston Regional Manager. In 2018 Eddie was excited to join the TriMark Innovation Center team, part of his role is to help provide a high-end experience in the Test Kitchen.

Mike Rashleigh

Business Development Manager

Mike joined the TriMark team in 2017 with a focus on advancing the tabletop business (Flatware, Glassware, Dinnerware, and Banquetware). He graduated from Bryant University with a bachelor’s degree in Computer Information Systems and minor in Sociology. After graduating college, he entered the foodservice sector working for Blount Fine Foods from 2003-2012.  During that span he held various roles as a New England Regional, Southeast Regional, and Business Development manager. Prior to working for TriMark, in 2013 Mike worked for Oneida Foodservice as the Northeast District Manager covering all New England.

Mike’s focus at TriMark is to help our customers effectively achieve their tabletop vision on time and within budget. Mike’s ability to discuss trends, design, concepts, costs, and profits allow our customers to make informed decisions to make their operation successful.

Tyrone Scoby

Tabletop Specialist

Taking on his first restaurant position in 1993 at the age of 15 Tyrone quickly became enamored with every facet of the hospitality industry. The creative process, manic pace, and camaraderie were just a few of the many things he fell in love with. A 1998 graduate of The Culinary Institute of America in Hyde Park, NY; Tyrone embarked on a culinary career taking him throughout restaurants and kitchens in New England and eventually across the country as a Personal Chef.

Tyrone joined TriMark in October of 2009 looking for new opportunities to learn and challenge himself within the industry. He spent 5 years as a sales representative, eventually transitioning to role as a Tabletop Specialist. Bringing decades of knowledge in both front and back of the house operations, Tyrone has taken on a role as not just a specialist, but a consultant for some of New England’s top establishments in the hospitality field. When he’s not working with one of the new restaurants opening, Tyrone can be found in his garden and kitchen wrapped up in his first love, cooking.


Chief Dog Officer

Mona is the Chief Dog Officer of the TriMark Innovation Center. She was born at Shultz’s Guest House in Dedham, MA to her mom Brandy, originally from Tennessee. One of 12 pups, Mona learned from an early age to lovingly cuddle, kiss and be part of a puppy pile.

In her official role as CDO, Mona welcomes guests, walks slowly around the Center, and naps under tables. She knows how to ‘read the room’ and finds the perfect mix of engaging with guests while also giving them space to peruse the many features of the venue. An avid sniffer and drooler, she is keenly aware of when there is a cooking demo or food is being served. In those instances, she can be typically found in the front row.

Mona works diligently to ensure she is a valuable part of the guest experience. On her free time, she loves daycare, running around the park, swimming in the ocean and treks at Deer Island.
